Terrapin Soup

Ingredients

  • • None Four quarts of water to 4 terrapins. First scald them, peel
  • • None skin, take them out of shell, and cut them up for stewing. Put
  • • None in water, and when it boils clear, put in 2 onions, a slice of bacon,
  • • None 1/2 teaspoonful of allspice; a scant 1/2 teaspoonful of mace, 1
  • • None teaspoonful of pepper, a little thyme and parsley. Brown a little

Instructions

Step 1. flour, and stir in 1 tablespoonful of butter just before serving.

Step 2. After it is in the tureen add the yolks of 2 eggs in butter; wine if you use it.
