Potato Croquettes

Ingredients

  • • None 2 cups fresh mashed potatoes a grating of nutmeg .
  • • None 2 tablespoonfuls cream yolks of 2 eggs
  • • None 1 teaspoonful onion juice 1 teaspoonful chopped parsley
  • • None 1 teaspoonful salt 1 tablespoonful butter

Step 1. Beat yolks light, add to the potatoes, then the other ingredi-

Step 3. until the mixture leaves the side of the pan. Mold in pyramid

Step 4. shaped croquettes, roll in beaten eggs, then in bread crumbs,

Step 5. and fry in boiling hot lard. Drain and serve.
